Seating only 15 guests at a time, Aulis Phuket is a Michelin-starred chef’s table restaurant that sparks culinary conversations whilst offering front-row views of the chefs at work. True to Simon’s ethos, the menu explores and experiments with hyper local ingredients, working hand in hand with local farmers and growers from across Thailand and Asia. The result is an almost entirely unique experience each service.
The chef’s table restaurant Aulis Phuket is open for dinner from Tuesday to Saturday at 19:00.
Like Simon’s other Aulis chef’s tables around the world, Aulis Phuket champions hyper-local ingredients. Our chefs develop and perfect flavours and techniques to create an almost entirely unique experience for the 15 guests at each service. The Aulis Phuket team is led by Simon, Executive Chef Oli Marlow and Head Chef Charlie Wilson.
The tasting menu at Aulis Phuket is dedicated to showcasing native ingredients, working hand in hand with local farmers and growers from across Thailand and Asia. The menu can be paired with wine or non-alcoholic drinks flights, carefully chosen by our restaurant team.
Simon Rogan MBE is an internationally renowned, award-winning chef, recognised as one of the pioneers of the farm-to-table movement. Since founding his debut restaurant L’Enclume in 2002, which currently holds three Michelin stars, Simon has built his own sustainably-operated farm and is now chef patron of ten award-winning restaurants across London, The Lake District, Malta, Hong Kong and Thailand.
