Aulis Phuket presents the acclaimed chef’s table concept by Michelin-starred chef Simon Rogan, where his signature philosophy of seasonality and ingredient-led cooking finds expression through the flavours and produce of Thailand. More than 95 per cent of ingredients are sourced locally, with close partnerships between the kitchen and regional farmers, fishermen, and growers shaping each menu.
The experience begins in the lounge with a series of opening snacks before guests take their seats at the chef’s table for an immersive tasting journey. With just 15 seats, diners watch as the entire kitchen team prepares and presents each course directly in front of them, explaining the ingredients, techniques, and inspiration behind every dish.

An internationally recognised pioneer of farm-led dining, Simon Rogan has built a global collection of acclaimed restaurants spanning the United Kingdom, Hong Kong, Malta, and Thailand. Across the group, his kitchens collectively hold nine Michelin stars, including three Michelin stars at his flagship restaurant L’Enclume in England’s Lake District.
